Umbria, a small region with great tastes, satisfies all palates: the best dish for meat lovers is pork, masterfully treated by Umbrian butchers who turn the meat into delicacies like sausages, tasty hams and salami, like those of Norcia, to eat with unsalted bread that brings out the taste.
This rich array of dishes goes hand-in-hand with the genuine quality of the products, including the truffle, the most precious of all. The most common variety is the black truffle, very popular with pasta or with game, especially in the area of Norcia and Spoleto, but more valuable white truffles can be found as well, particularly in the Tiberina Valley, Orvieto and Gubbio.
Everything is seasoned with the golden and fruity olive oil produced in this region, which enhances any dish without upstaging the flavor; Umbrian oil of high quality is awarded with a PDO quality mark (Protected Designation of Origin).
  1. Wine Tasting, lunch and Extra Virgin Olive Oil Tasting and Vineyard Tour

    Vineria del Carmine is a recently restored, 16th-century farmhouse where tastings of the Chiesa del Carmine Estate wines and farm products are conducted by bilingual sommeliers. Visitors will learn about the Estate’s winemaking processes and how an abandoned property in Umbria has been transformed with the help of organic agriculture and hard work into an award-winning winery.
    Tastings are in English, Italian and French.

    Menus change seasonally and please notify us of any special dietary requirements or intolerances so we can be prepared to accommodate them.

  2. Extra Virgin Olive Oil

    We are very proud of our extra-virgin organic olive oil which has a wonderful dark green colour and a lovely peppery bite. Our guests will receive a small bottle of our oil in their houses on their arrival and we hope you enjoy it. It is best used raw to maximize its flavour, such as in salad dressings, drizzled over soups, or for dipping bread. If you would like to buy more oil, please ask David and Chrissie.

  1. Cooking Courses

    Cooking classes are available at the winery down the valley from Casa San Gabriel. Taking a cooking class enhances culinary skills, builds kitchen confidence, and introduces new techniques and Italian food in a fun, hands-on environment. Classes provide professional guidance to improve knife skills and flavour balancing with a focus on fresh pasta making.

  2. Truffle hunting

    A truffle hunt offers an immersive, "slow travel" experience, allowing you to explore nature, learn about local culinary traditions, and hunt for the rare, aromatic "culinary gold" with an expert hunters and his trained dog. It is a hands-on adventure topped off with tasting fresh truffle dishes, making it a unique, memorable, and educational outing. Hunts take place early morning in the warmer months of the year before it becomes too hot for both hunters and their dogs. Guests are collected from the winery at the bottom of the valley and will need to follow the truffle hunter and his dog as they make their way through woodlands around the estate, so we recommend comfortable clothes and walking shoes.

    After the truffle hunt, guests return to the winery for a truffle degustation meal matched with the award-winnning wines of the estate.
    *NOTE walking shoes are recommended to negotiate the terrain during the hunt.
